Have you ever tried cook chicken paksiw, fresh chicken not grilled or leftover? Kasi malimit nating ipaksiw ang tira-tirang grilled chicken di ba?
I was craving for chicken paksiw for a days now, but I don't have grilled chicken. I only have fresh chicken in the freezer. So I decided to cook it as paksiw.
Paksiw is one of the common dish that we love, especially paksiw na bangus di ba? Kahit na ilang araw na siya sa ref, ay mas lalo pa siyang sumasarap. Ito ang dish na hindi basta basta napapanis. Kaya naman palagi din itong baon sa mga outing ng pamilya.

Notes: My cooking doesn't have exact measurements of ingredients, kumbaga tantiya tantiya lang ng naaayon sa aking panlasa.
Chicken Paksiw
Ingredients:
- 1/2 kg chicken
- 3 pcs saging na saba (cut into three)
- 1 can liver spread
- 1/2 cup vinegar
- pineapple tidbits
- onion garlic and ginger
- 2 cups water
- 3 pcs siling berde
- salt and pepper to taste
- a pinch of sugar
- 3 pcs dahon ng laurel
- 2 tbsp vegetable oil
Procedure:
- Saute onion, garlic and ginger.
- Add the chicken and saute until browned.
- Add the water, vinegar, and dahon ng laurel. Season with salt and pepper and a pinch of sugar.
- Then add the liver spread, saging and the sili. Let it simmer until it is cooked.
- Lastly, put in the pineapple tibbits.
- Serve with rice and kainan na.
This dish is very flavorful and is needed more rice hihihih. Kaya siguradong sira ang diet kapag ganito ang ulam.
Kahit simple lang ang pagkain basta masarap ang pagkakaluto ay parang kumain na rin sa isang mamahaling restaurant.
